Barley flour frisa is another classic from Puglia. Very tasty and easy to digest, preservative and colorant free, made according to the traditional artisanal recipes from Puglia. Frisa must be immersed in cold water for about 5 seconds, then lay it on a plate and cover it with chopped fresh tomatoes , fresh basil leaves, extra virgin olive oil and a sprinkle of sea salt.
