Bella di Cerignola black olives, GGG (71-80 olive/Kg), water, salt, iron gluconate, colour stabilizer.
They are harvested manually at the beginning of October to avoid damage. They are kept in water and slat for 30 days then treated with sodium solution to decrease bitterness.
