Variety of olives: 60% Cellina of Nardò, 40% of other varieties, depending on the harvest of the year. Our intense extra virgin presents slightly fruity and spicy notes, typical of the southern lands.
Try it also with vegetables and salads, on beef tagliata, stews, and croutons!

Characteristics: total maximum acidity is under 0,8 grams per 100 grams of oil (oleic acid).
Colour: intense yellow, with slight green reflections.
Smell: medium fruity.
Taste. Medium fruity, with an artichoke aftertaste and herbaceous hints.

Milling method: within 24 hour, continuous-cycles, at low temperature (cold extraction).
Milled and bottled in the Squinzano (LE) establishment, via per Torchiarolo km 1 per Loliva, via Pozzuolo 4 - 73100 Lecce.
Use and storage: it’s advisable to store it in a tightly closed container, in the dark, at a constant temperature of 14°, to maintain its fragrance and freshness. The heat, the temperature changes, and the light cause a rapid oxidation of the oil. We use bottles and containers in tinplate, because this kind of material allows a greater stability of the organoleptic characteristics.
